how to love yourself (beans)



I hate the weather. 
I talk about and blame nearly everything on the weather lately— all the moods, bullshit, inclement anything— it’s just the weather. 
In the land of near perpetual sunshine— I’m taking the cold very personally. 

I turned 22 last week, which is simultaneously something and also nothing at all. 
I had a lot of feelings, mostly because I realized and remembered how much everything has changed. 
A friend reminded me today that everything is always changing— but right now, it all feels very potent and more real. 
Mostly because I’m not a child anymore. 
And I was a child when I came to college. 
And suddenly I’m not. 

The other day, I went for a long hike in the rain with my father— we walked for about three hours and looked at the creek, which is full of clear, green water. My dad is full aphorisms and stories.
“This is real.” My dad said of the rain. 

This is real. 

I’ve been thinking a lot about the idea of “love yourself.” Which is one of those frustrating and vague things that people who are vexingly successful both at love and work like to say. 
“Love yourself.” 
Bullshit. It means so little. 
Here is all I know: 
On Saturday night, make a pot of beans. 
This is how you love yourself. 
You make the pot of beans with some garlic and onions, and then all week, whenever you are hungry, or don’t want to spend money, or are tired— there are beans to eat— all week long. 
This is the only thing I really know at this point. 
Make some beans.

This is how you love yourself.

Chia Seed Pudding

I go grocery shopping on Saturdays now. 
And I cook a lot on Sundays-- sometimes spiced sweet potatoes, always brown rice, once, a disgusting and heavy loaf of bread. 


Life is strange. 
I think about that a lot these days-- mostly because it's unbelievable that we are lucky enough to be alive at the same time-- but also how little control I have, really. 
Often I wonder, how it is that anyone gets so that they have work, babies, house and garden full of fireflies? 
Is it always just falling and falling into things and people?

I guess. 

I like making chia seed pudding on Sundays too-- it's so simple and luxurious-- like eating a sweet caviar, or frog eggs. 
I like it also, because when I was in New York, I would take the F train to Midtown, stop at the same quick breakfast spot and buy a banana and chia seed pudding and hope that the iced coffee would prevent me from sweating through my business casual. 
It was such a lonely, lonely summer. That’s the thing about loneliness --you think-- this is the worst it will ever be, and then, one day, you are lonelier. 
So I took the F, and listened to soul music the whole way there, and ate my chia pudding, surrounded by glass and iron and felt small but often good.  Usually, when the workday was over-- I would walk the long way home-- eat $3 Indian food and sit in a park. 
I wondered a lot about work. 
And how I don’t know how to add value to the world yet. 
And how I don't know how to get there.

I like to think it begins with going grocery shopping on Saturdays, cooking on Sundays. Eating pork-belly sliders and drinking vodka with your sister friends on Thursday night, and then going out on Friday and Saturday too. Or maybe staying in, tucking small children into bunk beds-- waking up early, walking. 
Maybe, after a time-- when the work is more done, and more years passed and everything more known, somehow maybe one day, you go home to a garden of fireflies. 
After just falling and falling and falling into jobs and people. 
And chia seed pudding. 
Ideally, hopefully, chia seed pudding is part of how you get there too. 


Chia Seed Pudding

1/4 chia seeds
3/4 cup full fat coconut milk
1/2 cup coconut water
1 tsp pure vanilla extract
maple syrup to taste

In a small bowl or half pint Mason type glass jar, add coconut, chia seeds, coconut milk, coconut water, and vanilla. Stir until very well combined. 
Place in refrigerator and allow to rest overnight. 
Eat.

Curried Lentil Soup with Tomato and Spinach


I spend a lot of time in bed these days, staring at the massive pecan tree just outside my window. 
I think about the future a lot.
I often wonder if everyone else is in their bed too, thinking about whatever it is that comes next, and staring at their respective trees. 


When the future makes me lonely, I think about Georgia O'Keefe who lived alone in a tiny adobe house in the red desert of New Mexico. When she couldn't sleep she would make yogurt and knead loaves of bread and sweep her floor in the middle of the night. Then I think about the food writer, MFK Fisher, who liked to leave peeled oranges on her window sill, especially in the winter, until the clear orange membrane became dry and crackly, and so when she bit, the orange was only a cold punch of crunch and winter and citrus. 


Sometimes, I think about a boy I knew only briefly, who once cooked me a dinner that mostly consisted of boiled carrots and brown rice, and how kind it was, but how much it needed salt. We  later went to a party, where everyone was older, and speaking languages I didn’t understand. We sat in a corner, and he told me about his lovers, while a tiny French man sang and danced along to "Like A Virgin." The little man danced up to me, "Whenever I feel sad,” he said, “I just listen to Madonna! Like a virgin! Like a virgin!!!" 

And often, I think about my friend Mary Margaret, who was the most beautiful old person I’ve ever known, and she died too soon, but she would throw these parties that were catered by Torchy’s Tacos, and the old-school literati and glitterati of my hometown would go, and there was always this man who wore his cowboy hat inside, he would sit and play groovy ragtime licks on her baby grand piano for hours. 


So lately, I spend a lot of time lying on my bed, staring at the tree outside my window. 
Lately, it rains. 
The other night I made this pot of lentils, and added potatoes and all the remaining odds and ends in my refrigerator.
And the simplicity of the lentils reminded me of all these tiny beautiful things; dancing to Madonna, cold oranges, and tiny houses in big deserts and cowboy hats. 

And how small it all is, and how perfectly beautiful. 


Curried Lentil Soup with Tomato and Spinach
from The Gourmet Cookbook 

1/4 cup vegetable oil
2/3 cup finely chopped onion 
2 garlic cloves, minced
2 teaspoons finely grated peeled fresh ginger
1 tablespoon curry powder
1 teaspoon ground cumin
1 cup lentils, picked over and rinsed
2 1/2 cups (20 ounces) chicken stock or store-bought low-sodium broth
2 1/2 cups water
2/3 cup chopped drained canned tomatoes
2 cups coarsely chopped spinach
fresh lemon juice to taste
salt and black pepper

Heat oil in a 4-quart heavy saucepan over moderate heat. Add onion and cook, stirring occasionally, until lightly browned, 6 to 8 minutes. Add garlic and ginger and cook, stirring, for 1 minute. Add curry powder and cumin and cook, stirring, for 30 seconds. Add lentils, stock, and water and bring to a boil. Reduce heat and simmer, covered, until lentils are tender, 20 to 25 minutes. 
Stir in tomatoes and spinach and simmer, uncovered, stirring occasionally, until spinach is wilted, about 2 minutes. Add lemon juice and salt and pepper to taste.

Jambalaya


I just moved again, my fourth time moving in the past four years. This is exhausting only because there's constant re-adaptation to a new kitchen, which is actually a real thing. I don't know how electric burners work?? Why does the oven light go on and off?? Just how cold IS my freezer? Also, because I've always lived with other people, everyone else always provided all the culinary hardware, which means that I've been getting inventive. 
Did you know you can actually shred cheese with a vegetable peeler? 


(Like a fool, I forgot to take pictures, so here is my brother and some nice pink skies.) 

Anyways, I made some jambalaya so fine that I thought I had been kidnapped as a baby because actually I MUST be Cajun.

This explains everything!

The real thing about jambalaya, is that you can adapt it to all your personal cravings.
After reading several recipes it appears that most people don't put shrimp in it?
But my mama always puts shrimp in her jambalaya, so I did too.
You can make it on the stovetop, or in the oven or both (I did both.)
You can add okra, or not.
You can add sausage or not.
You can make your own cajun seasoning or not.
It's great.



Mostly I liked making jambalaya, because it made me feel at home, and feeling at home is suddenly a rare and special thing. 
Lately, I find myself asking questions such as, do other people make a place a home?
Is home just where you feel safest? 

Sometimes, when these questions are too much, I sit in my small green bathroom, and watch a trail of tiny black ants crawl from the east end of my bathtub near the faucet to the west end where I keep my shampoo. 
I like the ants, because the ants are not concerned with questions of home or place or belonging. 
They just keep walking. 

The point is. 
This jambalaya is worth you time. It will make the air smell thick and rich and spicy. 
It will bring you back to the tactile, real version of yourself. The part of yourself that only exists in the HERE NOW.  
But mostly it tastes really good. And fills you up. 

You will love it. 

And I love you.

Jambalaya

These are guidelines, adapt as you please. 

2 tablespoons peanut oil, divided
1 tablespoon Cajun seasoning
10 ounces andouille sausage, slices into rounds
1 pound boneless skinless chicken breasts, cut into 1 inch pieces
1 onion, diced
1 small green bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (16 ounce) can crushed Italian tomatoes
1/2 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon hot pepper sauce
2 teaspoons Worcestershire sauce
1 1/4 cups uncooked white rice
2 1/2 cups chicken broth

1. Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.

2. In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, and Worcestershire sauce. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.

3. Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed. (I actually ended up putting my Jambalaya in the oven at 375 F, for about half an hour because my electric burners didn't seem capable of cooking everything evenly for a long period of time.)

Chicken-in-the-pot

Last night when I couldn't sleep I started going through pictures of myself on Facebook, which is narcissistic, but also, I guess it's in the perpetual attempt to try and figure out where I actually am, versus where I actually was, and actually how is it that anyone gets from Point A and arrives at Point NOW? 


I don't know. 

I've been thinking about the past year a lot, because years always seem to sort of roll themselves over in the summertime for me, and also I've been thinking about the future. 

I think I'm supposed to be thinking about my "career" and "the job market" and other imposing, adult, grey-sounding words that make me want to bury my head in the sand. 
Instead though, I just daydream about being home with my little brothers and making chicken-in-the-pot. 


I want to make this chicken every day for a week, because it smells like the actual smell of heaven, and I want to make it with bright sweet potatoes and fat sticks of celery and thin, translucent slices of yellow bell peppers and the rinds of pickled lemons. 

I want to make this more than almost anything else right now, but at the moment, I don't have a kitchen. 


I don't know what I'm supposed to do with all the past selves, that linger on various social media platforms, and I don't know what I'm supposed to do with the future cubicle that real adulthood sometimes appears to be. 
I'm trying to trust that even when I can't fall asleep, everything is still okay. 
I think this is what they call "faith." 
Besides, the future isn't here yet, and the past went. 
So I'm craving chicken-in-the-pot. And for the time being, I can't have it. 
It's okay. 
So I guess I'm here, at Point NOW. 
And really, it ain't so bad. 



Chicken-in-the-Pot Makes 4 servings (but you can multiply the recipe easily)
from cookbook goddess Dorie Greenspan 

Approximately 2/3 cup extra-virgin olive oil
4 heads of garlic, broken into cloves, but not peeled
16 shallots, peeled and trimmed, or 4 onions, peeled, trimmed and quartered, or 4 leeks, white part only, halved lengthwise
8 carrots, peeled, trimmed and quartered
4 celery stalks, trimmed and quartered
Salt and freshly ground pepper
4 sprigs fresh thyme
4 sprigs flat-leaf parsley
3 sprigs fresh rosemary
Grated zest of 1 lemon
16 prunes, optional (apricots or dried apples are also good in this dish)
1 chicken, whole or cut-up
1/2 small (2 lbs or less) cabbage, green or red, cut into 4 wedges (try Savoy cabbage)
1 cup chicken broth
1/2 cup white wine, or another 1/2 cup chicken broth
About 1 1/2 cups all-purpose flour, for the seal
About 3/4 cup hot water, for the seal

Preheat the oven to 450 degrees F.

Set a large skillet over high heat and add about 2 tablespoons of the olive oil. Toss in the garlic cloves and all the vegetables, EXCEPT the cabbage - you might have to do this in two batches, you don't want to crowd the skillet - season generously with salt and pepper and cook, stirring, until the vegetables are lightly browned on all sides. Spoon the vegetables into a large Dutch oven with a tight-fitting lid - you'll need a pot that holds at least 5 quarts. Stir in the herbs, lemon zest and prunes, if you're using them.

Return the skillet to the heat and add another tablespoon or so of oil. Season the chicken with salt and pepper and brown the chicken on all sides. Put the chicken in the casserole, nestling it among the vegetables. Fit the cabbage wedges around the chicken.

Stir together the chicken broth, wine and 1/2 cup olive oil and pour the mixture over the chicken and vegetables.

Now you have a choice: you can cover the pot with a sheet of aluminum foil and the lid, or you can make a paste to seal the lid. To make the paste, stir the flour and water together, mixing until you have a soft, workable dough. Working on a floured surface, shape the dough into a long sausage, then press the sausage onto the rim of the casserole. Press the lid into the dough to seal the pot.

Slide the pot into the oven and bake for 70 minutes. If you need to keep it in the oven a little longer because you're not ready for it, don't worry - turn the heat down to 325 degrees F and you'll be good for another 30 minutes or so.

The easiest way to break the seal, is to wiggle the point of a screwdriver between the dough and the pot - being careful not to stand in the line of the escaping (and wildly aromatic) steam. If the chicken was whole, quarter it and return it to the pot, so that you can serve directly from the pot, or arrange the chicken and vegetables on a serving platter.

Chicken Curry with Cashews


My whole life I've struggled with self-doubt. 



I've wasted so much time asking myself "Am I worthy?" of work and love and questioning over and over and over again if I am enough or capable or deserving. 

So much doubt. 

I don't know why. 
I don't know where doubt comes from. 
Fear, I guess. 
And specifically the fear of failure and pain. 

I don't doubt myself when I cook. 
Because there is something to measuring, there is something to learning how to knead bread, and follow a recipe-- that makes my doubt melt away. 
Because all you have to do is whatever comes next, and that is enough. 
That's all you can do. 
And if the recipe is bad, or you mess something up, fundamentally, it doesn't really matter. 

So I like taking risks in the kitchen. 
Because why not? 
Because thinking that I'm not capable of cooking something is stupid and only leaves me hungry. 
So I made my first ever curry, because surprisingly, I had all the right ingredients.  
And I made it and I liked it. 

And making it made me feel capable. Like I was enough. 

Of course, doubt comes back to me, all the time. 
It's a problem that all the curries in the world probably can't solve. 
But maybe. 
Maybe with each new recipe,  I'll keeping doubting a little less, until all the doubt is finally gone. 
I hope so.

Chicken Curry with Cashews
from Gourmet Today by Ruth Reichl 

NB: Though the recipe calls for a cut-up whole chicken, you can use an equivalent amount of chicken parts or all thighs. 

1/2 stick (4 tablespoons) unsalted butter
2 medium onions, finely chopped
2 large garlic cloves, finely chopped
1 tablespoon finely chopped peeled fresh ginger
3 tablespoons curry powder
2 teaspoons salt
1 teaspoon ground cumin
1/2 teaspoon cayenne
1 (3 1/2 to 4 pound) chicken, rinsed, patted dry, and cut into 10 serving pieces (breasts cut crosswise in half) 
1 (14 to 15 ounce) can diced tomatoes in juice
1/4 cup chopped fresh cilantro 
3/4 cup cashews (toasted or raw) 
2/3 cup whole-milk yogurt 
garnish: chopped fresh cilantro
accompaniment: basmati or jasmine rice

Heat butter in a 5 to 6-quart wide heavy pot over moderately low heat until foam subsides. Add onions, garlic, and ginger and cook, stirring, until softened, about 5 minutes. Add curry powder, salt, cumin, and cayeene and cook, stirring, for 2 minutes. Add chicken and cook, stirring to coat, for 3 minutes. 
Add tomatoes with juice and cilantro and bring to a simmer; then cover and simmer gently, stirring occasionally, until chicken is cooked through, about 40 minutes. 
Just before serving, pulse cashews in a food processor or electric coffee/spice grinder until very finely ground (do not grind to a paste). Add to curry, along with yogurt, and simmer gently, uncovered, stirring, until sauce is thickened, about 5 minutes. 
Serve chicken over rice, sprinkled with cilantro.

Sweet Potato Fries



Right now. 


Right now, I am relearning how how to spend days alone with myself. 
And I’m trying to figure out if a Friday night ever made me truly happy and if I should part my hair to the left again and if I can drink coffee on an empty stomach (I can’t) and that I like waking up in the morning and walking alone and also that I like howling along to the same three CDs I keep in the car. 
These are tiny, quiet things. 
Sometimes, life is very quiet. 
I’ve been trying to not write too much. 
And not think too much. 
Because I am trying to be light. 
Just do the best for the day, and let that be enough. 
And not get bogged down in futures or pasts. 
Because otherwise it is all so difficult. 


So the leaves are rosy again and November looks and smells and tastes exactly the same. 
I’ve been eating a lot of apples lately and not doing anything in the kitchen because the mental forethought that that takes is kind of beyond me. 
I’ve got three sweet potatoes languishing in my cupboard that I wanted to make sweet potato fries with, but I keep forgetting which spices to buy. 
However, you should make them, because you will be popular and famous if you do. 
That is a promise. 
And darling love, Thanksgiving is just a few days away. 
And I am so thankful for you, so thankful for the more than two people who have returned to read about recipes here. 
It means a lot.

Roasted Spiced Sweet Potato
from The Gourmet Cookbook

1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1 teaspoon kosher salt
2 pounds medium sweet potatos, scrubbed
3 tablespoons vegetable oil

Put rack in middle of oven adn preheat to 425 F.

Coarsely grind (or finely chop) coriander, fennel, oregano and red pepper flakes in coffe/spice grinder, a mortar with pestle, or chop them together very finely. Stir together spices and salt.
Cut potatos lenghtwise into one inch thick wedges. Toss with oil and spices in a roasting pan and spread out in one layer. Roast for 20 minutes.
Turn wedges over with a spatula and roast until tender and slightly golden, 15 to 20 minutes more.

Caesar Salad


When I was 16 years old, I saw the movie An Education, and it changed my life. I over-identified with the heroine, played by Carey Mulligan, to the point that it almost scared me. Because the character had this longing to really LIVE in the world. And in all of my adolescent angst I completely understood. 



In the very last scene of the film, she’s riding a bicycle through the streets of Paris. And she’s happy. She’s not longing to live her life, not wishing things were otherwise, but actually present in the moment, actually living.



I have been riding my bike a lot lately. With friends and alone. 
And there have been moments, silent, except for the sound of peddling and my own breath-- when I’ve sped under orange street lights late in summer night-- and I have thought to myself-- appreciate this. Because in those rare fractions of seconds-- 
I was so present that I didn't want to be Carey Mulligan. 
I didn't want anyone's life but mine. 

I wonder if everything can be this way. That the life you dream about can be yours always. That everything, from the clothes you wear to the food you eat, if it can all be of a piece. 
That all the tiny things can add up to a beautiful life, a present so wonderful that sometimes you can only recognize how fucking glorious it is in retrospect. 

I think so. 
I hope so. 



So I am quietly building a life. Or trying to.
I’m eating caesar salads with homemade dressing and attempting to delight in bike rides, lunches, conversations, swimming pools, coffee shops and dancing in the grocery store. 
Because right now, I am so young, and so much feels so possible. 





I think so. 
I hope so.

Caesar Salad Dressing

Note: The recipe asks for six cloves of garlic. Which seemed just illogical to me. So I used four. Do as you like. And of course, I am a big proponent of anchovies. They really make it that much better. Also, this recipe is unusual in that it doesn't call for a raw egg, which is typical of many dressings.  

6 cloves garlic, minced 
1 tablespoon Dijon mustard
1 tablespoon vinegar
2 tablespoons mayonnaise
1/2 cup olive oil 
salt
pepper
lemon juice 
minced anchovy fillets (optional) 

2-3 heads Romaine lettuce
Parmesan cheese

Combine garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly. Add mayonnaise and blend together to form a thick base. In a slow stream add olive oil through hole in lid. Scrape dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice. If desired, add anchovy to dressing to create a deeper, saltier taste.

Wash and dry lettuce. Chop leaves if desired. Combine dressing with lettuce and toss gently. Top with parmesan. Salt and pepper again as desired.

Omelettes




I like my omelettes a little crisp and lacey, almost an eggy snowflake, folded over cheese and greens. With an extra grind of salt on top. 

I like the sameness of omelette making. The technique might vary, but in the end, you always get an omelette. 
Or hopefully you do. 

I talked to a friend today, I told him how much the transience of life has been scaring me lately. 
Change. 
And he looked at me and said simply, "That's the way it's always been."
He's right. 
But I can't shake the fact that most of the people I know now, I probably wont know in five years. 
Despite the aches and bruises, the same/dullness of school, that guy who never called me, the cruel thing she said, the times I cried in the shower, and all the breaking aching disappointments of growing up and living more, I love this now. 


I love these people and laughing until crying with them, the dreaminess of Friday afternoons, my neighborhood grocery store, the fact that I live above a doughnut shop, running in the quiet neighborhoods around the university, coffee shops and conversations that roll and unwind endlessly... 
These are things worth remembering. 
These are things to love. 

But five years from now it wont really matter. 
So I look forward and smile. 
Hopefully by then I'll be writing better songs and living in Brooklyn, with an apartment full of plants and twinkle lights. 
And it will be better




But five years from now, no matter the location, no matter who I still know, or who I am. 
I will still be making omelettes. 
They're the perfect comfort food for when you are hungry and maybe a little lonely and need a hot meal. 

Omelettes: a meal for every now and every future.

L'Omelette
from Mastering the Art of French Cooking by Julia Child

2 or 3 eggs
Big pinch of salt
Pinch of pepper

Beat the eggs and seasonings in the mixing bowl for 20 to 30 seconds until the whites and yolks are just blended.

1 tablespoon butter
An omelette pan 7 inches in diamete at the bottom

Place the butter in the pan and set over very high heat. As the butter melts, tilt the pan in all directions to film the sides. When you see that the foam has almost subsided in the pan and the butter is on the point of coloirng (indicating it's hot enough), pour in the eggs. It is of utmost importance in this method that the butter be the correct temperature.

Let the eggs settle in the pan for 2 or 3 seconds to form a film of coagulated egg in the bottom of the pan.
Giving the handle of the pan with both hands, thumbs on top, and immmediately begin jerking the pan vigorously and roughly toward you at an even, 20-degree angle over the heat, one jerk per second.
It is the sharp pull of the pan toward you which throws the eggs against the far lip of the pan, then back over its bottom surface. You must have the courage to be rough or the eggs will not loosen themselves from the bottom of the pan. After several jerks, the eggs will begin to thicken. (A filling goes in at this point, if using.)
Then increase the angle of the pan slightly, which will force the egg mass to roll over on itself with each jerk at teh far lip of the pan.
As sson as the omelette has shaped up, hold it in the angle of the pan to brown the bottom a pale golden color, but onlya second or two, for the eggs must not overcook. The center of the omelette should remina soft and creamy. If the omelette has not formed neatly, push it with the back of your fork.

Turn omelette onto a plate and rub the top witha bit of butter and serve as soon as possible.
